Friends of Palmetto Island recently hosted the 2nd annual cracklin cooking at Palmetto Island. Kevin Lemaire, Al Lee, Carl LeBlanc, Ike Sagrera and Ricky brought their pots and shared their cooking skills and cracklins with about 250 visitors. The stirring paddle sits atop the black pot while the gratons are cooking.
Once cooked, the cracklins are put in a paper towel lined box to absorb the excess grease, then seasoned to perfection. Items like chicken wings, sweet potatoes, apples, smoked sausage, bananas and beignets were flash fried in the lard after the cracklins.
The finished product was enjoyed by everyone who attended.
